I'm glad you asked! Financieres, which are a type of madeleine. Or shortbread. Or, personally, I use it in certain curries. And don't buy almond flour! Get yourself a coffee grinder and grind your own. Almond flour can go rancid and I don't have enough room in my freezer for all the stuff we're being told to keep in there these days.
(What do you mean, you use your coffee grinder for coffee? What's wrong with you? LOL)
I use mine for grinding spices, or almonds.

I have 2 of the small grinders, use it just like you said I use the one for spices, etc..& one for coffee.

It works well in very light doughs, like madelines, pastry cups, some shortbreads. The recipes I've seen usually mix it with regular flour.

We have a coffee grinder and alittle mini chop. We use it to grind spices as well.

I used one from King Arthur Flour - I just contacted King Arthur flour and they said the almond flour is used in a combination of other flours. They gave me several recipes too.
I used almond flour to make an almond cake. I also used almond paste as well. I found this recipe on King Arthur Flours website. If you get stuck you can contact them via any social media, via email or live online chat. Then with their recipes the bakers go through the recipe reviews. If someone says that they had trouble one of the bakers will post in bold you can call us on our 800 line and we can troubleshoot. I've contacted them numerous times.
