I have never seen apples baked like this. All I ever did was core them, cut them on the top a few times and lightly sprinkle them with cinnamon...and oven bake. These look like just the skins and a little of the fruit that have not been baked. The filling looks somewhat baked with other? stuff?. Bizzare.
I don't think they are yet baked, but just reading the title, it took me back when I was a little girl. My mother used to bake apple with just sugar on top middle. It was delicious. Nonetheless, it makes a difference what type of apple is baked. My favorite apple was the "renette" (French) or "reineta" (Castilian), France or Spain, translated into "Russet Apple". Here in the US, it apparently comes from Canada.
