I made Northern Italian bean soup. It has onions, garlic, parsley, ham bone and meat and beans. After about an hour you add potatoes. I always sneak a potato out of there, mash it with my fork, put salt and pepper and olive oil on it. It is soooo good for a mid morning snack. If you want to you smash the potatoes to thicken it and then add some pasta. It's delicious. For something different you also add some sauerkraut. I love that too. Can't have sauerkraut because of all the salt.
Didn't realize I had done this one. Love Black Bean Soup--especially the Cuban kind--from Ybor City in Tampa, Fl. Love to go to the Columbia Restaurant to eat it.
