When I was growing up my mother insisted I eat the stems of the broccoli not just the tops. The stems were tough and didn't taste good. But then, only about 5 years ago, I discovered that, if you peel the stems and get the hard outer layer off, the core of the stems tastes good. Better late than never I guess. :)
Trynfindit, that peeled stem is also very good raw. So is the stem of cauliflower if you trim it, too.

Yes, I didn't mention that I mostly eat broccoli raw (including the peeled stems). I didn't think about cauliflower though. Thanks!
I also like broccoli steamed and then add a little salt, olive oil and margarine.
Cauliflower is good grated, steamed and served like rice with a little salt and margarine.

Steam your cauliflower, broccoli, some yellow zucchini or squash and mix it in with brown rice. Add a little grated cheese and you have a wonderful, healthy casserole. To dress it up, sprinkle some chopped fresh tomato over it or add the little grape tomatoes when you mix the rice and veggies together - the heat will "cook" them. Even my Dearly Beloved will eat it! Makes a good side with chicken, fish, pork - about anything, actually.

I can't remember. Sorry. But probably-- that sounds about right. Today's "TV Dinners" or whatever they call those things now, sure have a lot of broc. in them. It is colorful and maybe cheap for them? I can't imagine that most people love it.

I think it's a vegetable that doesn't get damaged when freezing, but so do carrots, corn, potatoes, etc.
