My granddaughter was only about 5 when I taught her to make deviled eggs. A couple of years later, she decided to make a name tag for every dish on the Thanksgiving table. On hers, she wrote "doubled eggs" lol We still laugh about it, and she's 15.
I am a bit of an egg snob, as there are quite a few people within 10 miles of my house that sell eggs and other produce and herbs, etc. The locally produced eggs are so much better than grocery store offerings. I just will not buy eggs there.
I usually add a bit of horseradish and chives into the yolks and ripe or green olive slices on top and then sprinkle with paprika. That is usually my dish to pass at family gatherings.
I don't think I've ever heard of eggs having a top and bottom layer. The layer of eggs are hens (groan), but, what egg-sactly (think Vincent Price saying that as Egghead on the 60's Batman series) are the top and bottom layers of an egg?

AS, I too notice half-boiled eggs in many cookbook photos these days. Ugh--soft or hard, but not somewhere in between, please! I was just thinking about the fact that as a child I couldn't bear the smell of hardboiled eggyolk; now I realise that since my sight was very poor, all my other senses were sharper as a consequence, including my sense of smell. I could only enjoy omelettes and egg salad sandwiches with lots of mayo on the bread.

In this case, the top layer of the "pictured" egg is yellow. The bottom layer of the "pictured" egg is white.

I thought a devilled egg meant you popped the yolks out and mixed them with mayo and seasoning? That looks like a plain hardboiled egg cut in half, to me.

I think I am more inclined to go with those who said it looks like butter. A close look does not show the texture I know as deviled egg.

On my mom's side of the family, deviled eggs always had some paprika sprinkled on top of the yolk mixture.
nlbuchanan - wouldn't the texture depend on what the yolk was mixed with (and how much) and how that mixture was placed back into the white? It kind of looks like a fork was used based on the parallel lines.

My husband likes black olives and paprika on his deviled eggs. His brother likes bacon on his.
Aussie....Are you aware of a deviled egg? The whole egg is boiled and the yolk removed and mixed with other ingredients and put back into the egg. I have no idea what you mean by the top and bottom etc
Hi Jingles, yes that is what I was thinking of. The bottom white and yolk looked like a regular boiled egg and then the part on top of the yolk looked like a devilled egg. Mind was not working too well last night lol. Hugs.

I think it is two halves of two different eggs - one was hard boiled and 1 was soft boiled, and they showed 1/2 of each egg. Or maybe the yolks on us.
