It's really quite good, nborchardt - creamy and smooth, slightly sweet and spiced with cinnamon and nutmeg. Usually served with a dollop of sour cream and perhaps a splash of white wine.

Very late today. Didn't realize I hadn't done them until I went into my email. Never heard of pumpkin soup either, but would like to taste it. What do you call a bee that can't make up its mind. A maybe! Hope you had a great day.

Have you tried butternut squash, cut in half-longway, remove the seeds, add butter and some brown sugar and bake. Yum!
Or --- butternut squash, cut and peel, cut in cubes, steam or boil, Mash with butter and salt and enjoy.

And what's more --- Pumpkins are for Jack-O-Lanterns --- not much more. Although I did have a taste of pumpkin soup at a New England restaurant which was quite good.
It's a lovely photo, and I really do love the colours around this time of year (here in Canada it's fall) but I'm one of the weirdos who really doesn't care for pumpkin. As decorations, wonderful. As food, well...you're all welcome to enjoy my share. LOL
